On the menu at his restaurant in New Orleans since day one, BBQ Shrimp is a recipe so essential to Emeril that he wanted to create a version for the home cook. BBQ SHRIMP SERVES 4 AS AN APPETIZER “Barbecue shrimp” originated at Pascal’s Manale Restaurant & Bar in New Orleans in the 1950’s and became hugely popular. When I was getting ready to open Emeril’s, I developed my own white tablecloth version, with a kicked-up flavor base that simmered for hours. It’s still a signature dish at Emeril’s. Here I simplify my interpretation for the home cook, served with jalapeno biscuits. SHRIMP 24 large head-on shrimp (about 2 pounds), peeled and deveined, tails left on, shells and heads reserved. 1 tablespoon cracked black peppercorns 2 teaspoons Emeril’s Essence (recipe follows) 1 ½ teaspoons chopped fresh rosemary 3 tablespoons olive oil 1 cup dry white wine 3 cups water ¾ cup Worcestershire sauce Juice from 2 lemons (about ¼ cup) ½ cup chopped onion 1 tablespoon minced garlic 1 tablespoon hot sauce ¼ cup (½ stick) unsalted butter, cut into 8 pieces Jalapeno Biscuits, for serving (recipe follows) In a medium bowl, toss the shrimp with half of the cracked pepper, 1 teaspoon Essence, and the rosemary until evenly coated. Cover and refrigerate until ready to use. Heat 1 tablespoon oil in a 12-inch skillet over high heat. Add the shrimp shells and heads, the remaining ½ tablespoon pepper and 1 teaspoon Essence, and cook, stirring a few times, for 3 minutes. Add wine, water, Worcestershire, lemon juice, onion, garlic, and hot sauce. Bring to a boil, reduce the heat to a simmer, and let gently bubble for 45 minutes. Strain through a coarse strainer; you should have about 1 cup of barbecue base. Heat a 14-inch skillet over high heat. Add remaining 2 tablespoons of oil, then shrimp and cook for 2 minutes, searing on both sides. Pour in the barbecue base, reduce the heat to medium, and simmer until the shrimp are cooked through, about 1 minute. Remove from the heat; whisk in the butter, one piece at a time, not adding another until the previous piece is fully incorporated in the sauce. Transfer the shrimp to a serving platter or small individual plates. Spoon the sauce over the shrimp and serve immediately with jalapeno biscuits, if desired. EMERIL’S ESSENCE MAKES ⅔ CUP 2 1/2 tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried oregano 1 tablespoon dried thyme Combine all ingredients thoroughly. JALAPENO BISCUITS MAKES 12 BISCUITS 1 cup all-purpose flour 1 teaspoon baking powder ⅛ teaspoon baking soda ¼ teaspoon salt ¼ cup cold unsalted butter, cut into small pieces 2 tablespoons chopped seeded jalapeno pepper ¼ cup buttermilk, or as needed Preheat the oven to 375 degrees. Line a baking sheet with parchment paper. Sift dry ingredients into a small bowl. Work the butter into the flour with a fork until the mixture is crumbly. Stir in the jalapeno. Mix in the buttermilk a little at a time, adding just enough so that it comes together into a smooth ball of dough. Do not overwork the dough. On a lightly floured work surface, roll dough into a 7-inch round, ½ inch thick. Using a 1-inch cookie cutter, press out 12 rounds. Reroll scraps to make additional biscuits. Transfer the rounds to the baking sheet. Bake until the tops are golden and the bottoms browned, about 15 minutes. Serve warm. New Orleans style barbecue shrimp isn't bbq at all, but it is a great shrimp dish. Pascal's Manale restaurant in New Orleans invented the dish in the mid 50's, and it's remained an iconic dish throughout the years. Try this recipe at home on the grill, the stove top, or oven. If using a grill, like the M Grills M16, set it up for a two zone grilling method. If using the stove top, you can just control the heat with the knobs on your stove. It's also easy in the oven. Just set your oven to 350*, and place shrimp in a pan, and pour the sauce of them. Bake till the shrimp are finished. 1/2LB of 16/20 fresh shrimp 1/2LB Unsalted butter 6TBS Worcestershire sauce 2TBS Minced garlic 2TBS Black pepper 2TBS Beer 1/2TBS Creole seasoning 1TSP Hot sauce 1/2TSP Kosher salt 1 Lemon Heat skillet over medium to high heat. Melt half of the butter, but don't let it separate. Add worcestershire sauce, minced garlic, and whisk till well blended. Then add dry seasoning, hot sauce, mix well, add hot sauce and beer, and mix well. Mix in the remaining butter and a slice of lemon. Bring to a light boil, and add shrimp. Cook shrimp for a couple minutes, flip, add more black pepper, and cook for a couple more minutes until the shrimp are done. Serve with some toasted french bread slices. Garnish with lemon juice (grill the half lemon if using a grill), and finely sliced green onions. Enjoy it with a group of friends and family. Let’s talk about how to make my zesty shrimp marinade! Shrimp Marinade Recipe - How to Make Spicy Shrimp Marinade Ingredients ¼ cup olive oil 1 tablespoon honey or you can use brown sugar 2 cloves garlic minced 1 tablespoon fresh parsley chopped 1 teaspoon smoked paprika (try an extra pinch or two of ghost pepper powder for some great spiciness!) 1 teaspoon lime zest ½ teaspoon crushed red pepper flakes or more as desired - optional, for spicier marinade Salt and black pepper to taste - 1/4 teaspoon each is usually good Hot Sauce to taste - optional, but hey! I NEED hot sauce! Spicy shrimp for me, please. =) 1 pound shrimp peeled and deveined Cooking Directions Whisk together the olive oil, honey, garlic, parsley, paprika, lime zest, red pepper flakes and salt and pepper in a small bowl. Reserve a few tablespoons now if you'd like to use some as a finishing sauce. Place the shrimp in a large zip-lock bag and pour the marinade over them. Seal the bag and refrigerate at least 15 to 20 minutes, or for 1 hour before cooking. When ready to cook, drain the marinade and discard it. Grill or saute the shrimp for 2-3 minutes per side, or until pink and cooked through. Transfer to a serving platter. Squeeze on a bit of fresh lime juice to finish. A very similar rendition of Mr Bs Bistro, New Orleans LA BBQ shrimp. Rinse 8-10 Colossal size whole unprocessed shrimp. Clean heads with toothpick as indicated in video if desired, or leave it behind...... its fat and can add additional flavor to the dish. Remove digestive track with toothpick as indicated in video, or leave it behind............ some do, it dont add any additional positive flavor to the dish however. Set shrimp aside. Prepare BBQ sauce by mixing the following into a mixing bowl/cup: 1/3 Cup Worcestershire sauce One(1) Tsp fresh cracked black pepper One(1) Tsp ground pepper 3/4 lemon squeezed One(1) Tsp Cajun/Creole seasoning One(1) Tsp minced Garlic One(1) Tsp Louisiana style hot sauce 1/4 Tsp dried Thyme (optional) 1/4 Tsp dried Rosemary (optional) Stir contents up, set aside. Chunk up 1 1/4 sticks unsalted butter, set aside. In large skillet , add a few splashes of olive oil and heat over medium-high heat. Lay the shrimp into the skillet. Pour the prepared BBQ sauce into the skillet. Wash the BBQ mixing bowl out with about one(1)Tbsp. water and pour into the skillet. Lay in 1/4 of the left over lemon (quartered). Allow shrimp to cook about one minute, shaking the skillet often to keep the shrimp moving around the skillet. After one minute, turn the shrimp over , continuing to shake the skillet and allow shrimp to cook about one more minute. Reduce heat and add in 1/3 of the chunked up butter. Shake and swirl the butter until melted, tossing and turning the shrimp while shaking the skillet. Add another 1/3 of the butter once the first 1/3 has emulsified. Repeat process of tossing, turning and shaking skillet until second 1/3 of butter has melted. Add last 1/3 of the butter, allow to emulsify. Control heat by lifting skillet off the stove top if necessary. If butter begins bubbling to much because of to much heat, it may break and become greasy. Once all butter is emulsified, remove skillet from heat. Place shrimp's into a plate, pour over sauce, sprinkle a little more pepper and some parsley on top. Serve with toasted bread of choice.

Smoked Shrimp Recipe | Barbecue Shrimp Smoked on Ole Hickory Smoker For more barbecue and grilling recipes visit: 🤍 This Smoked Shrimp recipe is my take on BBQ Shrimp, get it out on the smoker and create some Smoked Shrimp. For these Smoked Shrimp, it's really simple. You just get some large, fresh shrimp. You can use the ones that haven't been peeled or deveined, but I like to make it easy on myself and my guest and get the shrimp ready to go. First I season my shrimp with my Killer Hogs The BBQ Rub, then add it to a metal half pan. Next I put together my butter mixture: Smoked Shrimp Sauce: - 1/2 lb melted Real Butter, salted - ¼ cup Worcestershire Sauce - 1 Lemon quartered - ¼ cup Flat Leaf Parsley chopped I pour this mixture over my shrimp and get the whole pan out on the smoker. For these Smoked Shrimp, I'm holding my Ole Hickory Pit right at 250 for the entire cook. After about 10-15 minutes, check your smoked shrimp and give them a little stir. You want your smoked shrimp to be pink with all the translucent. It typically takes 25-30 minutes for the smoked shrimp to get done. Once your smoked shrimp are ready, pull them off the smoker and garnish with a little extra parsley and the juice of a lemon. Now it's time to dig in! This is where the toasted french bread comes in - you can use it to soak up all the shrimp sauce while you enjoy your Smoked Shrimp. A little heat and a little sweet makes this the perfect shrimp marinade! 20 - 25 large shrimp (raw, un-peeled) 6 tablespoons olive oil 4 cloves garlic, chopped 3 tablespoons honey ½ teaspoon cumin 3 chipotle peppers in adobo sauce, chopped (from can) 1 teaspoon sea salt 1 teaspoon coarse ground black pepper Juice of one lime Wood grilling skewers -Peel the shrimp and remove the tails. Set aside -In a small bowl, combine the remaining ingredients and whisk until smooth. -Toss in the shrimp and stir until well coated. Place the shrimp and sauce in a Ziploc bag and refrigerate at least 6 hours or overnight. -Pre-heat a grill to 400 degrees F. Clean with a wire brush and oil well. -Skewer the shrimp. This video is about HOW TO MAKE NEW ORLEANS STYLE, BBQ SHRIMP. From Chef Mike, I've eaten BBQ shrimp many ways. Some I liked, some I didn't like. The point is everyone doesn't cook them the same way or with the same ingredients. One thing is for certain. BBQ Shrimp does NOT contain BBQ sauce. As with any recipe, you have to adjust ingredients to suit your taste. For example, my wife doesn't like much salt, and she likes more butter. I prefer a bit more salt and pepper too. Once at a very expensive restaurant, the BBQ shrimp had a sweet flavor almost like a maple flavor. I thought it was good, my wife didn't like it. Use this recipe as a starting point and create this wonderful dish the way you will enjoy it. Usually when we make BBQ shrimp for ourselves, we buy 3 pounds of shrimp and cook them in a stainless steel pan in the oven. And there are always left overs. This recipe is for you to make a single serving that actually is enough for 2 people. It is for this reason we may never do the 3 pounds again. This came out so good and we didn't have any left overs! I hope you enjoy it. INGREDIENTS: 1 Pound fresh shrimp with heads on. 5 Tbsp. Salted Butter split 2 Tbsp. and 3 Tbsp. 4 Tbsp. Olive Oil 2 Tbsp. lemon Juice 4 Thin lemon slices for garnish 1 & 1 /2 cups dry white wine 1 Tbsp. Worcestershire Sauce Pronounced (Wish-ta-shear) ¼ onion minced ¼ bell pepper minced ¼ rib celery minced 1-2 Tbsp. Chopped Parsley 2 Toes Garlic minced 1 Tbsp. all purpose flour 2 Green onion tops sliced on a bias 2 Tbsp. River Roads BBQ Shrimp Seasoning 1 Tsp. Liquid crab boil Sliced Toasted French Bread for sopping up sauce. INSTRUCTIONS: Clip off shrimp whiskers (antennae) and the barb (horn) on the head and the barb on tail of the shrimp. Most southerners suck the juice from the body of the shrimp. No one likes a sharp barb or whiskers in their mouth. In a skillet over medium heat, melt 2 Tbsp. butter in the same amount of olive oil. Add onions, bell pepper, celery, garlic and a pinch of parsley. Sauté until veggies get soft, 3 minutes. Sprinkle on the Tbsp all purpose flour. Stir in well. Add in Lemon Juice, crab boil, Worcestershire Sauce, white wine and remaining 3 Tbsp. of butter. Stir in well. Add River Roads BBQ SHRIMP seasoning, stir in then add shrimp. Bring everything up to a boil then reduce heat to simmer. Cover and let simmer for 1 minute. Then uncover and stir. Cover again and simmer for 1 minute. Continue to stir and simmer until you see the meat of the shrimp start to separate from their shells. Turn fire off and cover for a few minutes to allow shrimp to re absorb some liquids. Chef Notes: Sometimes depending on the age of the shrimp, you will not see the separation of the shrimp body from it’s shell. Therefore, you must stop cooking after 5 minutes and allow the shrimp to cool down before eating. TO SERVE: Use a crunchy bread like French Bread sliced into 3/4 inch pieces on a bias. Lay a few slices on the bottom of a dinner plate. Coat bread with the BBQ shrimp sauce. Layer shrimp nicely on top the bread and sprinkle on some green onion. SEASONINGS: We used River Roads BBQ SHRIMP seasoning. They even make it with no salt.

BBQ Shrimp and Grits Recipe with Grilled Shrimp, a Cajun Andouille Sausage Sauce and Cheese Grits For more barbecue and grilling recipes visit: 🤍 My BBQ Shrimp and Grits recipe is one you have to try. I started with 13-15 count Gulf Shrimp, some cajun andouille sausage and yellow stone-ground grits. I fired up my Big Green Egg with some B&B Lump Charcoal and got it up around 350. First I grilled my cajun andouille sausage for about 20-25 minutes and sliced it into small medallions. I cooked 1 cup of grits to package directions using chicken broth (but you can use water). Ince the grits are done, add some parmesan and cream cheese and keep them warm while you grill the shrimp. After the sausage is cooked and sliced, place it all in a cast iron skillet with a little bacon grease and place it back right on the grate. Let the skillet get hot again and start adding all your other ingredients. Once the sauce is starting to get together, it's time to grill the shrimp. I liberally seasoned my shrimp with my Killer Hogs Hot Rub - but use any spicy seasoning here you like. Them I place the shrimp directly on the grate for 1.5 minutes on each side. When the shrimp are almost done, throw them in the skillet and toss them in that rich, buttery sauce to finish. All that's left at this point is to make the dish. I just place my cheese grits on a platter and top with the shrimp and cajun andouille sausage sauce. Little more lemon juice, some green onions and crumbled bacon really set it off on top. BBQ Shrimp and Grits Recipe - 1lb Raw Gulf Shrimp Jumbo 13-15count peeled & deveined, tail on - 1lb Andouille Smoked Sausage - 6 slices Bacon crumbled (reserve drippings for sauce) - 8oz Butter - 1/3 cup Worcestershire Sauce - ¼ cup Flat leaf Parsley chopped - ¼ cup Green Onion (white parts) chopped - 3-4 cloves Garlic - 2 Lemons halved - 2 Tablespoons Killer Hogs Hot Rub - 16oz Chicken Broth - 1 cup Stone Ground Yellow Corn Grits - ¼ cup Parmesan Cheese grated fine - ¼ cup Cream Cheese Directions: 1. Prepare Big Green Egg or other grill for grilling at medium high heat 350⁰. 2. Place Andouille Sausage on grill and cook until internal temperature reaches 165⁰ about 30 minutes, turning as needed. 3. Heat chicken broth to boil over medium high heat and stir in grits. Reduce heat to low and simmer the grits for 20-30 minutes or until thick, stirring often. Stir in Parmesan and Cream cheese and keep warm until ready to serve. 4. Season shrimp on both sides with the Hot BBQ Rub. 5. Remove the sausage from the grill and slice in half lengthwise then chop into small pieces. 6. Place a cast iron skillet on the grill and add the sausage and 1 Tablespoon of bacon drippings. Brown sausage for 2-3 minutes on all sides. 7. Add Garlic, Parsley, and green onion and sauté for a couple minutes. Add Worcestershire and juice from 1 ½ lemons, stir to combine and melt in the butter a little at a time. 8. Place seasoned shrimp on grill for 1 ½ minutes each side. Add shrimp to the iron skillet and toss to coat. Cook the shrimp in the sauce for 1-2 minutes and remove from the grill. 9. To serve: Spoon the grits onto a large plate or platter and ladle the shrimp and sauce over the top. Garnish with finely chopped green onion and crumbled bacon.
